Taiwan's night markets are divided into north and south: the night markets of northern Taiwan and those of southern Taiwan. The night markets of southern Taiwan are protected by the Six Stars of the Southern Dipper, while those of northern Taiwan are protected by the Seven Stars of the Northern Dipper.
The Seven Stars of the Northern Dipper focus on the flavors of night-market food: sour, sweet, bitter, spicy, salty, savory, and numbing. The Six Stars of the Southern Dipper, on the other hand, focus on the ingredients, judging their quality through six senses: sight, hearing, taste, smell, touch, and perception.
