Transdimensional Shop: Buy Now, Pay Later

They say there's a shop like this.

It's in a remote location and only opens at random times.

It's full of treasures, including specialties from different worlds.

The owner is friendly and kind, even willing to let you buy on credit.

Just look at all the people willing to work off their debts to see how kind he is.

The blue-haired clerk with a single ponytail, Esdeath, is a renowned general of the Empire;

standing by the entrance, the greeter Utaha Kasumigaoka maintains her poise despite being thoroughly unwilling.

Don't think that just because Gilgamesh is loaded, he won't buy on credit. If he refuses to put up a Noble Phantasm as collateral, he'll have to work here as a stockroom clerk to pay off his debt.

What... you want to know why the owner is nowhere to be seen?

Because there are even more customers like Rin Tohsaka who run off without paying, and he has to go catch them himself.
