"Hangzhou Food History of the Song Dynasty" is the author's first case study after "Chinese Food History". The Song Dynasty is a key node in the history of Hangzhou food. If the previous Hangzhou food was just the traditional "rice, rice, soup and fish" in the south of the Yangtze River and was not much different from the surrounding areas, then the subsequent Hangzhou food appeared with its own rich colors and has been continued ever since.
