Peel and jing, and offer them to the emperor." The "pee" and "jing" mentioned here mean pickling and processing, and huts and melons are edible fruits and vegetables, often made into pickles, which are ancient kimchi used with rice and porridge as an appetizer. "Shang Shu" also records that "If you want to make soup, you can only salt plums." This shows that in the Shang Dynasty more than 3,100 years ago, the working people of our country had already used salt to pickle plums for consumption. This is the prototype of kimchi.
