The development of the dairy industry is becoming more and more attractive nowadays, and related research is also increasing day by day. However, the existing studies are mostly discussed from the perspective of animal husbandry economics and lack the analysis of dairy hygiene system. Or in terms of time period, it focuses on the development of the industry after the 1980s, but lacks understanding of the development in modern times. In view of the important position of dairy market management in the development of the dairy industry, especially the evolution of the system from the late Qing Dynasty to before 1949 still has certain reference value and inspiration for today's dairy industry management.
