Lin Shoucheng (a retired cook who came from time-to-time) was assigned to serve as the "feastman" here. He saw that food was wasted, food was dirty, and distribution was unfair, resulting in high injury and illness rates and high levels of resentment. His "old principles" (no waste or injustice) kicked in.
