A History of Song Dynasty Cuisine in Hangzhou

A History of Food in Song-Dynasty Hangzhou is the author’s first case study following A History of Chinese Food. The Song dynasty was a pivotal period in Hangzhou’s culinary history. Before then, Hangzhou’s food was little different from the traditional Jiangnan fare of rice and fish, with few distinctions from neighboring regions. Afterward, Hangzhou cuisine emerged with a vivid character of its own, one that has endured ever since. The foundations of Hangzhou cuisine can be traced back to the Song dynasty, and what we now call Hangzhou cuisine is built upon that culinary tradition. The book introduces a wide variety of ingredients and dishes, making for a rich and engaging read.
