"Jiu Jing", also known as "Beishan Wine Jing", was written by Zhu Hu (zi Yizhong), a native of the Northern Song Dynasty. He once opened a winery in Hangzhou and had rich experience in wine making. The "Jiu Jing" contains 13 types of distiller's yeast. In addition to the traditional rice wine, there are also wind and exposure songs. All the compositions used raw materials and added various herbal medicines. This shows that the technology of making wine in the Northern Song Dynasty was much more advanced than that in the Wei, Jin, Southern and Northern Dynasties. Regarding brewing technology, the "Jiu Jing" particularly emphasizes the importance of physalis, which can adjust the acidity of fermented mash, provide good nutrients for yeast, inhibit the growth of miscellaneous bacteria, and facilitate the reproduction of yeast. "Jiu Jing" also records the new technology of heating wine to sterilize and preserve it.
