His spatula flies as he cooks, his movements nimble and precise, without a hint of hesitation. In no time, he flips his wrist and serves the food onto a white plate: flower-shaped kidney slices, crisp green peppers, and vivid carrots. It is Wang Sanshan’s signature stir-fried kidney dish. He wipes the sweat from his face with the towel around his neck and calls to the maids waiting outside. “Hurry and take this to the prince. If it gets cold, it’ll start to stink.” A maid hurries in and replies, “Don’t worry, Uncle Wang. We ran all the way to the Magnolia Hall. A distinguished guest just praised us for being quick and clever and gave each of us a string of coins.” The guests of honor at Prince Lu’s banquets are all officials or wealthy nobles, and they’re generous with their money. Even the young maids serving tea can earn a string or half a string of copper coins, as much as a month’s wages.
